The main characters in the Twilight movies do not drink human blood. Not all vampires are that humane, however. The family of vampires that is the point of the movie are trying to survive in a world that prohibits murder, and feeding off of human beings is murder.So they've chosen to drink the blood of animals instead.
It is kind of like you quitting eating meat and only eating fish. Fish is a meat, but it is not pork or beef. If you recall, in the first Twilight movie, there were some vampires that were killing humans and drinking their blood.
They were not necessarily bad, however, as was proven at the end of the movie when some talked to the family and left the region because of respect for those vampires who were already there. The doctor and his "family" were not going to drink human blood, regardless of whose it was. They did not believe that they should use the humans as cattle, but as co-existing species of humans that they lived within.
If they did drink human blood, it would have been discovered by the missing humans, or dead humans, or the change in those humans whose blood they drank but turned instead of killed. After all, even Edward was not always a vampire, his doctor turned him when he was on his deathbed. He could have either died or be turned into a vampire, and he chose the latter.
According to the story, the Olympic Coven which composes of Twilight’s male lead character, Edward Cullen, his adopted two brothers and two sisters and his adoptive parents Esme and Carlisle (Carlisle is the one who turned him into a vampire as well as the head of their household) doesn’t drink blood nor kill other people. This practice allows them to coexist with normal humans although they cannot stay in one place for more than a few years since their facial and body features doesn’t change and that would cause controversy. Carlisle is the first vampire on this coven and the one who decided that he won’t be killing humans for blood.
Instead, he relies on animal blood. Another reason is that they don’t want to be a monster. After Carlisle discovered that he became a vampire, he tried everything he could to destroy himself (since he considers himself a monster now).
But after a few attempts, he’s still alive and ever grew thirstier. A herd of deer came passing by and he attacked them out of hunger then he felt somewhat satisfied so he realized that there’s a way for him not to kill people whenever he feels thirsty. Diet. This requires training as well since drinking human blood will still be more satisfying for them.
