You can use regular cheese and sour cream. I have always used ground turkey instead of ground beef I like the flavor better. Turkey Taco Salad 1 pound ground turkey 1 envelope taco seasoning 3/4 cup water 1 can red kidney (drained) 1 cup chunky salsa 3 cups shredded Romaine lettuce 3 Roma tomatoes chopped 3 green onions chopped 1 ripe avocado peeled and sliced 1 cup grated low-fat Cheddar or Jack cheese (pepper jack is a nice change) 1/3 bag tortilla chips 1 cup chunky salsa 1 cup fat-free sour cream In large skillet, brown turkey and drain.
Add water and taco seasoning mix and stir to mix thoroughly. Bring to a boil. Reduce heat to low and let simmer, stirring occasionally for 15 to 20 minutes.
Heat red kidney beans. Place a mound of lettuce on each plate. Top with a layer turkey mixture, then beans, followed by some tomato and green onion.
Add avocado slices along the rim of the plate. Stick tortilla chips all around the turkey mixture. Sprinkle with grated cheese.
Spoon on salsa and top with sour cream. Stick a few chips in the sour cream. I have carried this to this 'way too many church dinners and picnics, but it is always totally consumed. TACO SALAD Brown about a pound of ground beef. Add 1/2 packet of Taco Seasoning mix and 1/2 cup water to meat, in skillet, and boil a bit.
Rinse 1 can of "pork and beans"--I use the cheapest ones. Tear a head of iceberg lettuce into bite-sized pieces. Chop a medium onion.
Break 1/2 pack of some kind of chips into smaller pieces--can be Doritos, Fritos, any house brand of what looks likely. Chop a couple of tomatoes into bite-sized pieces. Combine all these ingredients in a large salad bowl.
Top with a whole bottle of Catalina or "Western" style salad dressing. I have seen it enhanced with ripe olives and sour cream, but I never did that. Notice I used only the cheapest ingredients and house brands, and it is very good.

Have a meat option. I make ground beef with taco seasonings, but cooked chicken would work well too. Then put out any and all fixings that interest you: cheese, salsa, sour cream, black olives, corn, diced peppers and/or onions, tortilla chips, Spanish rice, roasted peppers, ...anything at all that sounds Mexican & would be good on a taco.
The salsa & sour cream make enough moisture that I don't use a salad dressing, but there are lots of options in the salad dressing aisle that would be appropriate. I'd probably lean toward a ranch dressing, if I had to have one. I'm a picky eater, so I find this is a great way for each guest to accomodate their own tastes & preferences.

This is how my Mom used to make it when I was a kid...It is so good... hamburger meat taco seasoning mix lettuce shredded cheese sour cream guacamole (homemade of course, recipe below) blk olives kidney beans tortilla chips jalepenos chopped tomatoes chopped green onion chopped cilantro salsa **important ingredient - Catalina or French Dressing So Mom would brown the ground beef and add the taco mix according to the package directions, then she would have all these other ingredients lined up on the counter and we made our own, to our taste... I omitted the olives and tomatoes, but the most important ingredient is the Catalina or French Dressing...There is something very special about the sweet of the dressing and the salty of the chips and meat, that went so well with the creaminess of the sour cream and the spicyness of the salsa/hot peppers...It makes all of your tastebuds happy, regardless of where they are situated on the tongue ... Guacamole: Make at least an hr or 2 ahead of time 3 or 4 ripe avacados chopped cilantro finely chopped onion pinch or two of salt a couple of TBS. Of lemon or lime juice ground red pepper, to your taste (I like it HOT) (If you already know how to make guac, please forgive the step-by-step) Cut the avacado in half, keeping one of the seeds for later use...Hold an avacado half in the palm of your hand and take a paring knife to make a checkerboard pattern into the flesh, stopping at the skin...Turn the half inside out and taking a spoon, scrape the tiny squares of the flesh into a bowl...Continue with the other halves...Mush the avacado bits with the back of a fork until it is pretty creamy...Add the onion, juice, salt, and ground red pepper...Taste a bit to make sure it has enough salt/red pepper...Then stir in the cilantro...Put the seed you kept in the middle of the guacamole, this will keep it fresher, longer...Just using a lid on the bowl will not do, you will need to put plastic wrap flush, on the top of the guacamole, make sure it is completely covering every inch and that there are no air bubbles in the wrap, then cover it witha lid...Air is guacamole's ememy....Then enjoy...Yum, Yum, Yum! I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
