You will need to buy some gluten free pasta to start with and cook it in salty water. Drain and "shock" with ice water until cold. Drain again.
You then prepare the extras - like chopped onion, peas, strips of ham etc and then mix with the pasta. As for the dressing - you do need mayonnaise (I cannot think of a substitute) but can flavour with garlic, or paprika etc and also add finely grated parmesan cheese. I think the flavours depend on who has made it.
The main flavour in our local supermarket deli seems to be garlic. Another local deli must put a dash of tomato sauce in theirs as it is a pinkish colour and tastes almost like a seafood sauce - very nice though! .
