Do I only add woodchips at the beginning or keep adding them throughout the smoking process?

Make sure your wood chips are wet before adding them. The amount of chips you add will depend on your taste and what it is you are smoking. I just throw on a handful every so often, when I see that the smoke has started dissipating.So yes, at the beginning and during, and throughout the process.

Wow...and I mean WOW! Thank you to everyone who responded...made my ribs...used the rub recipe from BBQ Pit Boys off of YouTube...used a brown sugar glaze suggestion from the winners of the last Kentucky rib smokin' contest, sprayed them down every hour with apple juice and finished with a mop of 1/2 Bullseye Rib BBQ sauce and 1/2 apple jelly with 1/8 cup of fresh maple syrup. They were absolutely awesome.

Smoked for 5 hours at 250...amazingly easy to keep the temperature there and smoked throughout when the chips had burned completely out just added another handfull of soaked apple wood. Thank you everyone! Smoking turkey legs this weekend coming!

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
