Tofu can be used as an adequate substitute for meat, but the texture may not satisfy a meat eater. A better substitute would be textured vegetable protein, commonly called TVP. TVP is more suitable for a meat eater because it has the appearance and texture of ground beef.In some dishes, you can’t tell the difference between the ground beef and TVP.
TVP is a soy product and is high in protein and fiber. It’s dehydrated so it’s necessary to reconstitute it (2 parts liquid/1 part TVP) in water, stock or broth before using. After it absorbs the liquid, it will grow to twice its size and is ready to add to the dish you’re making.
