Bummer! You simply can not achieve the mousseline affect without egg whites. However, since you are only allergic to the albumen protein, I will suggest replacing it with an egg-white substitute; found in all dairy cases of major grocery chains.

Use the real yolks though, as they provide body and texture. You can also do without all the extra 'crap' in many recipes. Bread pudding is nothing more than cubed bread (I use challah for it's firmness and slight buttery-sweet flavour) and poured custard.

Leave out the whites Bread pudding is dry (or stale) bread soaked in custard. Some custards are made with yolks only and no whites, because the emulsifying effect of the egg yolk is really one of the key steps to making the custard set properly. You can make your custard extra rich by substituting egg yolks for egg whites, or leaving out the whites, or a combination of the two.
