Having a 50th Wedding Anniversary open house for my parents?

Having a 50th Wedding Anniversary open house for my parents. It will run from 1:30 - 4:30 pm, and appetizers will be served. Being an open house, people can come anytime during that period, although I'm sure some will stay for the duration.

I have my menu planned, and one of the items on the list is finger sandwiches (on the party bread). I truly have no idea how much chicken salad to purchase. We are expecting approximately 65-70 people, and probably 15 of those will be children.

I want to make sure I make enough finger sandwiches, but don't want to overpurchase on this one. This chicken salad is considered some of the best in our city and is very expensive. Can anyone help?

Here's how I'd figure it So let me just run down the details to make sure I'm getting them right: You expect up to 70 people (don't count the kids differently -- not worth the effort). You're making finger sandwiches on the little bread (about a tablespoon of anything fills them up which I'm figuring is about an ounce -- by weight) of chicken salad. I'd estimate that people will eat two of these (as long as there's a nice variety of other items).

70 people X two "finger sandwiches" each X 1 ounce of chicken salad per sandwich = 140 ounces (or about 8 pounds) of chicken salad. Have a great time! Bon Appetit!

1 If finger sandwiches I would suggest 2 sandwiches per guest since they are small besides you will have other things as well. If you run out its not the end of the world...Don't stess to much about it because then you won't have a good time yourself :) .

And ask how many tablespoons are in a pound of salad. They should have some idea how many sandwiches a pound will make. I agree with Lena... I wouldn't have only the sandwiches as a main item.

I did an open house for my Dad's 80th birthday with about that many people (actually more) and we had several other appetizers like meatballs, shrimp, cheese trays, veggie dips etc. With several options available, people won't fill up on the more expensive sandwiches. If there are children and teenagers, I'd make sure I had something they will like. Gordon's or Sam's club had large nacho cheese cans and 3 lb bags of tortilla chips.

For all the graduation open houses I've had, this was a big hit. I just opened the can and set it in a crock pot with water in it and it stayed nice and warm. Have some salsa too and kids will fill up on that instead of more expensive shrimp or chicken salad.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
