How come Lobsters can stay alive for so long out of water?

Lobsters breathe through gills. These gills are located under their tail. As long as their gills do not dry out, they can still breathe through them even if out of the water.

May also depend on how much humid the air is,since their gills stay moist for a extremely long time.
