I agree with fredmonster, it is trial and error...also phyllo is affected by the amount of humidity where you live...but it is worth it! .

Phyllo dough is tough when you don't work with it often. The secret is to keep a damp towel on the sheets and have brush to apply the melted butter. And of course be very delicate as you pull off the sheets.

You probably did all those things and still the dough got dry and ripped off in chunks. It is a bit trial and error to get it right. Once you get the hang of it you just have to work fast and have a system.

Phyllo is a pain, but the those spinach triangles are so good! .

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
