How do I use Nokogiri XML Builder with a field that is the word “text”?

I solved it using the "special tags" in Nokogiri.

Which means you need to put an underscore after the tag name.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
