Toast the muffins and lay them in the bottom of your pan, top them with Canadian ham, and spinach, In another bowl break some eggs 1 per person, add a little cream, salt , pepper, whip that up very well and pour it over the muffins, Bake at 350 until the eggs are done, sprinkle the top with grated cheddar cheese and put under the broiler until cheese starts to brown a bit and is bubbly. Just before serving pour hollandaise sauce over the top OR you can mic the spinach in with the scrambled eggs before pouring it over the muffins and ham, then bake.
