We are used to hearing that heart disease in America (and I suppose the rest of the world) is caused by consumption of cholesterol and saturated fat from animal products. Nothing, however, could be further from the truth. This statement, although sadly popular, has never been based on honestly evaluated scientific research and it has no support in the history of human health and nutrition.
Did you know that during the period of rapid increase in heart disease between 1920 and 1960, American consumption of animal fats declined but consumption of hydrogenated and industrially processed vegetable fats increased dramatically according to USDA-HNIS?
