The best dog grooming 'school' is an apprenticeship at a good grooming salon. You will have more hands on with different breeds. You will see a good groomer at work every day and observe and be taught while she works on dogs.

We did this in our salon and it worked well. All three students went on to own their own salons. That's how I learned, and I ended up being head groomer and manager after the groomer stayed home to raise her twins.
