Most of Germany is easy to reach by train. If you want to visit parts of Germany close to the Dutch border you can buy tickets on the day, but if you want to travel across Germany buying a few weeks or even 3 months in advance is much cheaper. You will have to commit to one train only, so you must travel when you have the ticket.(Link to the German rail websit near the end of this answer.
NS has also in international tickets page. ) Romania, Greece and Turkey are all so far away that you will have to fly to make it doable, Romania is the nearest and will take 20 hours driving, train travel is likely a bit slower Greece and Turkey are harder to get to over land You can find good deals on flights, but traveling to one of the countries and back to Amsterdam is not sensible, as you will lose a lot of time in transit I would select one of the four countries besides the Netherlands and spend half in each country, giving you a bit over a week for each destination, three at most, giving you almost a week in each, and not traveling back to Amsterdam in between and before going back home, as you will lose most of a day in transit each travel, with checking out of your hotel, getting to the airport, making sure you are in time for your plane, passport control and security checks. And the travel from the airport back into the city on the other end, (with looking for your hotel and checking in if needed.) And they are likely to know visa information Added after re-reading your question: With a one year old child you will even less want to travel all the time You might find the Netherlands and Germany a bit cold, depending on the actual weather and what you are used to at home, Romania, Greece and Turkey will be a bit warmer So it might be a good thing to do a bit of sight seeing in the Netherlands, maybe with your hosts babysit if they like doing that and your little one is happy with them. And maybe a week on a beach for relaxation in Romania, Greece or Turkey before returning home.
Unless your family in Amsterdam is willing to babysit while you travel around, I wouldn't be making any serious travel plans with a 1 year old. We brought our 2 1/2 year old son to Europe with us and it was extremely not fun. You can't stop for naps, crying fits and diaper changes while trying to see things ands travel without so much stress that you would of wished you never left home.
If so you have plenty to go and see. I am italian and I can say about my own country, but I use to travel around Europe as well. I have been in Germany and Greece and Turkey.

I will say not to worry about the 1 year old, I have 3 and an half between nephews, and if you are organized you can make a very good trip (plus I think we cannot waived the goodness of travel... I am sure you searched already tips about 'travelling with children'. Saying again about Viamundis, you can find them by country anyway, also in Romania and Germany and Turkey, and you can choose one by the map you see, the price and the review.

I suggest train with short itinerary, they are expensive in some places and not at comfortable in some country (just good in Germany), but all depends where you are going to be. I suggest the cities in Germany, very nice and full of history, and seaside resort in Turkey and Greece, althoug you can't miss Athens and Istanbul.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
