My favorite versatile snack food is the humble flour tortilla. Soften it up in the microwave for 10 seconds, smear with peanut butter and roll up. Or, sprinkle cheese on it and fold it in half, nuke for 30 seconds and you have an American quesadilla.
Put turkey or ham and a slice of cheese in the middle, roll up, and you have a light sandwich to go. With tortillas, you're only limited by your imagination. They come in many different sizes and thicknesses, and now they even have different flavors.
Vietnamese spring rolls! Just buy the spring roll pack at some asian market. When you get it, get one sheet out and just wet it with water (but not too much).
Wait for a bit so that it sort of dries and then add any ingredients! Usually people put cooked shrimp and lettuce leaves into the spring roll and then roll it up. But you can also put eggs, meat, and other vegetables.
