First, be realistic about the size of your guest list, especially if you want to self cater. Self-catering anything over 100 is an invitation for disaster unless you have a commercial kitchen, have plenty of help and are very experienced. Best effect, schedule the wedding for 1 PM with an afternoon reception or 7 PM with a dessert/cocktail reception, both these cut the food costs about 1/3.
