Three "I don't feel like cooking tonight" meals By far, our favorite quick cooked meal is one of two variations on fish sandwiches. The first is simply tuna fillets sprinkled with Paul Prudhomme’s Blackening Seasoning for Redfish either pan-seared or grilled. I serve them on big crusty sandwish rolls with some mayo into which I’ve stirred some wasabi paste.
Sides include salad, cole slaw, or purchased sweet potato chips. Your grocery store likely has tuna fillets in the freezer. The second is very similar. It’s fish sandwiches using on tilapia, with a chipotle tartar sauce.
Same sandwich rolls, same side dishes: Rub for tilapia fish sandwiches 1 teaspoon Paul Prodhomme’s Blackening Seasoning for Redfish ½ teaspoon onion powder ½ teaspoon garlic powder ¼ teaspoon cayenne powder Mix all ingredients in a plastic bag. Rinse fillets and pat dry. Toss gently with seasonings until coated.
Saute in olive oil one minute per side. Serve with Chipotle Tartar Sauce. Chipotle Tartar Sauce 2 tablespoons canned chipotle chiles (seeds and stems removed and discarded) 1 cup mayonnaise (I use Hellman’s Lite) ¼ cup sweet relish ¼ cup chopped onion Mix everything in food processor until chopped and combined Another quick and easy thing I do is a quickie pasta puttanesca. Boil up your favorite shape of pasta.
While it’s boiling, lightly saute in olive oil some garlic, olives, snipped dried tomatoes, onion, and/or peppers until soft. Stir in some bottled tomato sauce and serve over the pasta. Omlettes, Salmon cakes, and Baked potatoes topped with chili and cheese! All 3 are simple, and don't take long at all. I usually add a salad (I always keep bagged salad in the fridge), and maybe a vegetable, but not always. My husband loves omlettes, and they are so versitile and easy.
For him I use 3 beaten eggs, pour into pan, over medium heat, and keep pushing egg aside as it sets. When it's almost cooked all the way through, I add cut up ham, cheese, or bacon - sometimes I throw in leftover veggies, like cooked onion or peppers, cooked mushrooms or cooked cubed potatoes. At times I've also used salsa or diced tomatoes. I usually serve this with a side salad Salmon cakes - I don't really have a recipe, but I'll try to make one up.
I take a l4 oz. Can of salmon, dump it out, take out the bones (you really don't have to - they are very soft and actually can be crushed right in the mixture - I just don't like the idea of eating them) I add breadcrumbs, an egg or two, parsley, dill, garlic salt, onion salt, a big squirt of lemon juice, maybe some mayo, if the mixture seems too dry. Just form them into patties, or cakes, heat up some olive oil and cook over medium heat in a frying pan - only takes maybe 8 to l0 minutes to cook.
Once you get them nicely browned you can cover the pan and cook on low flame, to make sure they are heated through. I usually serve these with tartar sauce, a side salad and applesauce. The next one is really simple.
You can either bake the potatoes in the oven - I usually bake large potatoes at 425 for about an hour. If you are really in a hurry, you can microwave the potatoes till they are nice and soft inside, but I prefer to bake them in the oven, so the skin will get crisp, Once the potatoes are cooked, I split them, and stir up the insides so they are nice & fluffy. I mix in some cheese - any kind, american, cheddar, swiss, whatever, and then top with canned chili that has been heated up in a saucepan.
You can put some more cheese on top if you like. You could also top with bacon bits, sour cream and chives, brocolli and cheese - again, there are many possibilities. I usually serve this with a side salad and applesauce also (my husband LOVES applesauce) I just want to say, we are older people, and just don't eat as much as we used to, so it's enough for us - but when my husband was younger I probably would have thrown in a quick rice or noodle mix with the dinner.
Dinners Sometimes when I really don't feel like cooking, I have 2 standbys. One may not be very heart healthy but when my kids were young they loved it (we did as well. ) Take a box of Kraft Macaroni and Cheese and make as directed on the box.
I then brown some onions and 6 hot dogs and add to the mac and cheese. My niece's husband went nuts over this as I had made it for my great nephew....dad liked it better! The second, more heatlhy one is taking a box of Rice-A-Roni.
I then add whatever I can. I usually add a can of chunk chicken, onions, celery, garlic, even rice if you want. You can add Soy Sauce if you like as a topping.
You've got your rice, poultry and vegetables. I don't know if you'd like these, but they are standbys which are liked in my house! .
My favorites Ruebens easy and delicious eggs and sausage and toast simple and fast blt fast and easy .

I cant really gove you an answer, but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
