Peas are very easy from seeds as they can fix their own nitrogen, but they have a comparatively short lifespan from germination to harvest and death (a pro and a con - bad if you want lots of ongoing peas from 1 plant, good if you want to plant other things later on in that container). Most pea varieties need to climb so you'll need to provide some sort of frame for that (although I hear there is a sort that grows more as a small bush).
1) they're great companion plants at keeping pests away and 2) if you use a perennial herb which grows well in your area then you won't have to re-plant each year unlike regular veges and 3) a little goes a long way, leaving you plenty of fresh herbs to give away to friends and neighbors. My fave picks for indestructible herbs (I've done them from seed AND from plants) are: parsely, sage, and thyme. They'll all survive hot summers and snowy winters.
Sage makes beautiful purple flowers that bloom the second season and every one thereafter.

Sticking a tomato plant in a container is simple and easy. Just remember to water it everyday or it will dry up and not produce any fruit. You should also use an all purpose fertilizer for the best results.
I would suggest that you start with plants that you can set out in your containers. Make sure that you get large containers (5 gallons or more). Use good potting soil and don't forget to fertilize after the plants are established.

It depends on your climate. If the weather is warm, tomatoes or peppers will grow well. Plants are readily available.
Other easy to grow vegetables from seed are radishes, lettuce, carrots and parsley. When growing from seed it is better to sow the seeds in a seed tray. Fill the tray with seed compost, sprinkle the seeds evenly and cover with about a quarter of an inch of fine compost and water with a spray mister.
Cover the seed tray with a newspaper and after a few days, check daily for germination. The newspaper should then be removed otherwise the seedlings will become straggly. The seedlings can be transplanted into your containers when they have become about a couple of inches tall.
Use compost in the containers or a compost soil mix. Soil tends to be too compact and dries out too quickly.
Herbs grow well in containers also and give a nice aroma and produce flowers as a bonus. Try thyme, sage rosemary and oregano.
