They tend to think that Latin food is fattening, but flavorful food doesn't necessarily mean fattening food. You had a successful line of boutiques in Miami and Aruba. Why did you decide to go into the culinary arts?
I also had a very successful restaurant at the time called Rocca. I grew up in the culinary business under the wing of my mother, a Cordon Bleu-trained chef. She had a catering firm and restaurant in Bogota, Colombia, so food has always been a natural interest for me. What Latin American dish best represents your personality?
Ceviches. I like eating fresh, healthy foods where the star ingredients shine through their quality and simplicity of its great combinations. No need to cover this dish with any sauces.
What is one of your guilty pleasures? That's easy - chocolate! I recently dedicated a whole menu to it on "Simply Delicioso."

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
