Why is it that the perfect accompaniment to a beef steak is mustard, & yet, for roast beef, it's horseradish?

Never in my life have I heard of mustard with steak. But I do love horseradish with roast beef. Especially home made horseradish.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
