Yes. It's the best way to reduce the turkey's weight if it's too large or just to speed cooking time. Also because the legs cook faster than the rest of the turkey when deep frying, the dark meat tends to be a bit dryer when the white meat is perfect.
Some people will go so far as to deep fry the legs and thighs separately.
