I know it's not typical, but I love it anyway: Curried Chicken Cashew Salad 1 grilled chicken breast, chopped into 1/2" chunks--about 2 cups 1/2 c. Mayonnaise 1 T. Sweet curry powder (or hot, if you're up for it) 2 scallions, sliced into rings 1 stalk celery, diced 1/2 c.

Toasted cashews 4 oz. Snow pea pods (optional) Slice/chop everything. Mix curry powder into the mayonnaise, and mix it all together, saving cashews for the end.

I can't supply the recipe... he taught it to me once and I wrote it down. It's essentially: throw everything is a big pot, cook forever, serve with yoghurt. I gotta go make a quick call...
