The best recipe This is the Cook's Illustrated recipe, from The Best Recipe. I trust them. It's an unusual recipe for muffins, and more work, but it's very flavorful.3 c flour 1 tbsp baking powder 1/2 tsp baking soda 1/2 tsp salt 10 tbsp butter, softened 1 cup sugar 2 large eggs 1 1/2 cups yogurt 1 1/2 c blueberries (the frozen wild blueberries are best) tossed in 1 tbsp flour Whisk dry ingredients except sugar in a small bowl.
Cream butter and sugar untul fluffy, about 2 minutes. Add eggs, one at a time, beating well after each. Beat in half the dry ingredients.
Beat in 1/3 of yogurt. Beat in remaining dry ingredients in two batches, alternating with yogurt, until incorporated. Stir in blueberries (and a tsp of lemon zest, if you like).
Spray muffin tins with Pam. Divide batter among cups. Bake 25-30 minutes.

Well, this is a phenomenal recipe for blueberry cake, but I figure it'll work for muffins. Decadent Blueberry Cake 2 cups flour 1 tbs baking powder 1/2 tsp salt 2 sticks butter, softened 1 1/2 cups sugar 2 large eggs, at room temperature 1 cup sour cream 1 overflowing tbs vanilla 1 - 1 1/2 cup fresh blueberries, sprinkled with 1/4 - 1/2 cup sugar Combine flour, baking powder and salt in a large bowl; set aside. Using mixer, beat softened butter.
Add sugar and beat till fluffy. Add eggs, sour cream and vanilla. Gradually add the dry mixture.
Pour batter into a greased and floured 9" x 13" pan I guess for muffins you'd use a different receptacle. Pour the sugared blueberries on the batter and push them slightly below the surface. Bake at 350 degrees for about 45 minutes less time for muffins!
, until golden brown on top. Hope this works for you! Sources: Adapted from "Kosher by Design" by Susie Fishbein .
