My favorites: Lemon Parmesan, Green Goddess variation - Tao Dressing, and a guilty pleasure -Blue Cheese Dressing... This first dressing is my own variation of a recipe out of the Chicago Tribune from sometime in the 1980's- it is wonderful on a (lacto-ovo) vegetarian spinach salad with grated hard boiled egg, toasted sunflower seeds, and sliced fresh mushrooms. I also serve it on a salad of spring greens, thinly sliced pear, pine nuts and a couple of curls of fresh parmesan... Lemon Parmesan Dressing 1/2 c. Canola oil 1/2 c.

Extra virgin olive oil 1/4 c. Fresh lemon juice + the grated zest of the lemon 1/4 c. Dijon mustard 1/4 c.

Water 1/4 c. Honey 1/4 c. Grated parmesan (I use fresh, not the powdered can stuff that we affectionately call "shakey cheese") 2 t.

Worchestershire sauce pepper/salt to taste I throw it all in a blender and after the first blend, I taste it and then add oil or lemon juice to get the right taste - then I add sugar by the teaspoon to get the sweetness I want. This keeps really well in the fridge. I first tasted this wonderful dressing at my favorite college restaurant in Bloomington, IN called The Tao - it sadly closed down just after I graduated but they published a cookbook (The Tao of Cooking) so that now I have their awesome recipes.

If you can find a copy and like vegetarian fare, it was published in 1982 by Ten Speed Press out of Berkeley, CA... The resaurant served this salad as a meal with lettuce, sprouts, tomato, cuks, carrot, cheddar cheese and probably some other veggies I am forgetting. We like it on any veggie salads and sharp cheddar cheese is a nice addition... Tao Dressing 1/3 c. Mayo 1/3 c.

Yoghurt 1.5 T. Cider vinegar 1/2 t. Honey 1/8 t.

Salt pinch pepper 1/2 t. Finely chopped parsley 1/8 t. Basil 1/8 t.

Dill weed 3-4 spinach leaves 2/3 c. Canola oil Blend it all together and enjoy. I add a bit more honey and parsley to taste.

This keeps for a couple of weeks. What can I say about this one - so bad and so good! I serve it on iceberg and romaine lettuce... Blue Cheese Dressing 4 oz.

Blue cheese (I use Salemville brand) 1 c. Mayo 1/2 c. Sour cream 1/2 clove fresh minced garlic 1 t.

Sugar 1 T. Red wine vinegar2 T. Finely chopped green onions or chives Combine in a bowl; do not use a blender.It goes without saying, but use the full fat varieties of the ingredients for this recipe.

We eat this once a year just after strawberry season peaks here in MI - usually around Father's Day - with a big New York strip steak topped with homemade onion rings and sauteed mushrooms.
