Does anyone have a good low calorie recipe for a salad dressing?

Many of the light or fat free versions of salad dressings on the market don't taste that well. I would like to mix up my own for lettuce salads. Ranch, french, honey mustard, thousand island, whatever.....I like them all!

This goes great on a Strawberry Spinach Salad. HONEY-POPPY SEED VINAIGRETTE: makes about 1 cup 1/4 c. Balsamic vinegar 1/4 c.

Red wine vinegar 2 T. Honey 1 t. Dijon mustard 1/8 t.

Kosher salt 1/4 c. Olive oil 1 T. Poppy seeds 1.

Whisk together the vinegars, honey, mustard and salt. 2. While continuing to whisk, pour in the oil in a slow, steady stream.

Roll yer own Back when I was doing the South Beach thing religiously, I started making my own all purpose Italian dressing. Got one of those cruet thingies with the oil/vinegar lines marked on it. I'd put in (all dried) granulated garlic, cayenne pepper, minced onions and ground black pepper and then add the requisite amounts of good olive oil and red wine vinegar.

Made a wonderful topping for any kind of veggie salad (even spinach salad with bacon) and I also used it as a baste for grilling pork chops, chicken or fish. You might also want to take a look at the Paul Newman brand salad dressings. They generally taste great and they aren't loaded with sugars, chemicals and other crap.

The Olive Oil & Vinegar is just that and spices (No sugars at all), and it doesn't even have to be refrigerated. Great stuff compared to the usual brand name junk that's loaded with cheap oil, sugars, chemicals and thickeners.

A little goes a long way and it's quite good.
