I think even if you started this morning you can call yourself a vegetarian. I think other vegetarians only have issues with people calling themselves vegetarians who actually *aren't* vegetarian. Meaning "Oh yeah, I'm a vegetarian.
But I eat fish...and sometimes chicken... but I'll only have a steak once in a while.
I think it's similar to saying you've quit smoking. If the change happened yesterday,fine, but it's a good idea to mention that to avoid confusion.
