Spiced Hot Chocolate (six servings) 6 cups whole milk 3/4 cup (packed) dark brown sugar 15 whole cardamom pods, crushed 12 whole cloves 2 cinnamon sticks, broken in half 2 whole star anise 3/4 teaspoon whole coriander seeds 3/4 teaspoon ground nutmeg 1/4 teaspoon dried crushed red pepper 1/2 cup unsweetened cocoa powder 3/4 teaspoon vanilla extract preparation Bring first 9 ingredients to simmer in heavy large saucepan, stirring until sugar dissolves.
Remove from heat, cover, and let steep 20 minutes. Add cocoa powder and vanilla. Bring to simmer, whisking until blended.
Strain hot chocolate into 8-cup measuring cup; discard spices. Serve. You can make a gift-able version by grinding all the spices in a food processor sifting them through cheesecloth, and mixing them with the cocoa powder and brown sugar.

My Mother's recipe Your recipe sounds absolutely fabulous. I will have to try it. When we were children, my mother had the simplest way to make hot chocolate: she would just melt down some real dark chocolate with 2 tablespoons of water, than add milk and heat close to the boiling point while mixing.
Sometimes, she would add some whipped cream on top in each cup. Of course, I am originally from Belgium, and the chocolate there is to die for. She would usually do this on Saturday evening, mostly in the winter, with some "couques", a kind of sweet buttery bread, or with raisin bread.

I like starting with Mexican chocolate.... I like melting a tablet of Mexican chocolate (usually Abuelita's) in a sauce pan. I add a dash or so of milk so that I can melt it more easily. Once it has started to melt, I slowly add two to two and a half or three cups of milk (I kind of just judge and dump with my eye).
I'm careful to ensure that the chocolate melts into the milk nicely and smoothly. Once the milk and chocolate mixture is warm (generally not actually HOT and definitely not boiling), I add a dash of Bailey's Irish Cream (just a dash, not enough to really make it an alcoholic beverage - just enough to flavor it a bit). Pour and serve!

Your recipe is great, so just drop the butterscotch and replace it with some spice. I've gotten good results from cayenne pepper, ground dried chilies (Anaheim, hatch, poblano, etc) and even hot sauce (not the famous brand name one that starts with a T but one that has less vinegar or acid). You'll be surprised at the way the flavors dance around in your mouth.
