HOT water heater getting TOO HOT and we haven't touched it.Why has it become SCALDING HOT?

Hot water heater" makes absolutely no sense. If you had hot water, it wouldn't need to be heated. What you have is a "water heater" that needs professional attention.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
