I am very interested to see this question, as I have just discovered that like me, you live in Spain and I find it difficult to buy sausage meat, unless I go to a British supermarket, where it is expensive. We love Scotch eggs, so I decided to make my own sausage meat. In branches of Mercadona they sell good quality pork mince, quite cheaply.

They also sell packets of dry, fine breadcrumbs, called Pan Rellado, either plain or flavored with garlic and parsley. This is also very cheap. To make the sausage meat just combine the pork and breadcrumbs at a ratio of about 2/3rds pork, 1/3rd breadcrumbs, a little water to mix (you can add a stock cube to this if you like) salt and pepper and maybe some dried herbs.

The rest is really easy, just form balls of the mixture into rounds and cover the hard boiled eggs, being sure to seal the joins. Coat with beaten egg and roll in some more of the breadcrumbs, then deep fry until golden. This is completely my own invention, but it works well and my husband says my Scotch eggs are the best he's tasted.
