There are several variations to pasta e fagioli soup. Some people like to use ham but growing up in a big family and not well off, we skipped the meat. You will need 2 large cans of Cannellini beans, an onion, a small can of tomato sauce and a handful, maybe 3/4 cup of Ditalini pasta.
Lightly brown the onion in a little olive oil and add the 2 cans of beans. Fill the cans with water and add to the pot along with the tomato sauce. Salt and pepper to taste and simmer for about 15 minutes.
Add the ditalini pasta to the soup and stir often so pasta doesn't stick. When the pasta is cooked your soup is done. Serve with crispy warm bread and Parmesan cheese.
