This is an outstanding one-dish meal. Broccoli rabe is a strong-tasting green - a relative of broccoli, but with a more assertive, bitter flavor. It sometimes masquerades under the name rapini or broccoli rape.
Serves six people. Cook the pasta according to package directions and drain. Toss with a little olive oil to prevent sticking.
Heat the oil, onion and pancetta in a skillet over medium heat. Cook until the pancetta starts to get crispy, about 5 to 6 minutes. Add the garlic and cook, stirring, for 1 minute.
Add the white wine and increase the heat to medium-high. Cook until the wine is almost gone. Add the beans and chicken broth and bring to a boil.
Lower the heat to medium and cook until the beans start to fall apart, about 5 to 6 minutes. Add the broccoli rabe, pepper flakes and pasta, and stir together. Remove from heat and taste for seasoning; add salt and pepper to taste.
Top with grated parmesan and chopped Italian parsley, and serve. More.
