Chicken fajita's are a healthy quick meal that can be prepared in a short time. There are several variations of Chicken fajita, and in this one, you use Corona beer instead of oil or water! Put the thinly sliced or chopped chicken breast in your skillet and add the 1/4 tsp salt, 1/2 tsp black pepper, 1/4 tsp ground cumin, 1/2 tsp chili powder, 1/2 tsp garlic powder, and 1/2 tsp onion powder on top of the chicken and mix it around so the chicken is completely coated.
Add 1/4 to 1/2 cup of beer and turn on Medium high. Note: This recipe does not call for any oil. When chicken is about halfway cooked, add the green pepper and onion.
Covering the pan with a lid will help to steam the pepper & onion and speed up the process, but you will have to finish without the lid so the beer liquids can cook off.
