Under your circumstances, here's what I'd do... First of all, I wouldn't keep the pumpkin more than 7 days without using it, AND I wouldn't store it in the can. I'd open the can, use what I needed for recipe # 1, then I'd put it in a sealable plastic tub, and go on a quick google-search for more pumpkin recipes. I made the cookies, then found a good recipe for pumpkin bread and worked out just the right amount to use the whole can.

BUT if I didn't want that much temptation in the house, I'd decide then and there to freeze it in the plastic tub. Pumpkin freezes quite well. The only drawback to freezing it is that I tend to forget what's in there.(this is the recipe I made that gave ME leftover pumpkin!) I made a double batch of these.

When in doubt.. A cook’s general rule of thumb...about three days and toss it. Bacteria can grow even in condiments with an acid base. I buy smaller containers so I know my family gets the freshest.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
