If the price is the same, grab the 1gb, having extra memory doesn't hurt. But it doesn't help, either! Why is that, you may wonder?
Because it's NOT the amount of video RAM that determines the performance of a graphics card- it's the GPU. The card model is what's important, not the amount of video RAM! A Radeon HD 4850 or GTS 250 with 512mb is faster than a Radeon HD 5670 with 1gb!
A 1gb GeForce 9500GT is still just one-quarter the speed of a 512mb GeForce 9800GT! You should always go for the highest-end card you can afford (and your computer's power supply can handle) and not worry about the memory- that's one of the LEAST important specs of a graphics card. The TYPE of memory is important (GDDR5 or GDDR3 vs GDDR2), the memory bandwidth is important, the number of stream processors compared to lower-end models.
But video memory is mostly a red herring. Where having 1gb of VRAM instead of 512mb helps is playing games at high resolutions- 1920x1080 and 2560x1600. At those resolutions the extra memory smooths out gameplay and gives you a few more fps.
But at resolutions below that, only 512mb of VRAM is ever used, anything extra just sits untouched! If you've got a monitor with a resolution of 1680x1050, 1440x900, 1280x0124 etc. there's absolutely NO difference in performance between 1gb and 512mb versions of the same card. Which brings us back to the Radeon HD 5670, which is a low-midrange card.
It's not fast enough to play demanding games like those at 1920x1080 or higher- you need a Radeon 5770/4870 or GTX 260/460 for that. So until you get to that level of cards, there's no advantage having 1gb! Even the Radeon 5750 and GTS 250 aren't quite fast enough to really benefit from having 1gb (Those cards can handle tough titles at 1680x1050, but not higher) although in easier games like COD or Starcraft 2 it helps a little.
Card manufacturers use video RAM as a marketing gimmick- putting 1gb on weak cards to make them look better. Shoppers who don't know anything about card models will assume more memory=better card. Seeing 1gb versions of low-end cards like the Radeon 5450 and GeForce 9400GT... it's just silly, those cards can't even use all that memory (and it's slow GDDR2 memory anyway).

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
