Try these..... Red Bean Chili This may seem an unseemly amount of chili powder, but it makes the flavor jump right off the plate with a minimum of ingredients. 2 to 2 1/4 pounds lean ground beef or turkey 1 large onion, chopped (about 1 1/2 cups) 5 cloves garlic, minced 1 cup canned beef broth 1/3 cup chili powder 1 tablespoon ground cumin 1 tablespoon unsweetened cocoa (optional, but I never make chili without it) 1 14 1/2-ounce can diced tomatoes 2 15 1/2-ounce cans kidney beans, drained 1 teaspoon kosher salt 1 tablespoon cider vinegar To taste: Tabasco, 1/2 to 1 teaspoon cayenne or 1 to 2 tablespoons chipotle en adobo puree Optional toppings and sides: grated cheddar cheese, sour cream and corn bread Place a large Dutch oven or saucepan over medium-high heat. Add the beef or turkey and cook until browned, about 5 minutes.

Add the onion, stirring well, and cook until translucent, 3 to 5 minutes. Add the garlic and cook 1 minute more. Gradually add the broth, scraping up any browned bits from the bottom of the Dutch oven.

Stir in the chili powder, cumin, cocoa and tomatoes. Reduce heat to medium-low, cover, and let simmer for 10 minutes. Add the beans, salt, and vinegar, stirring well.

Simmer uncovered for 10 minutes more. Adjust flavor with your spices of choice. Garnish with the Cheddar cheese, sour cream.

If desired. Serve hot, with corn bread or crackers. Meatloaf 1 1/2 pounds lean ground beef 1/2 cup crushed buttery round crackers like Ritz 3/4 cup shredded Cheddar cheese 1 (1 ounce) package dry onion soup mix 2 eggs, beaten 1/4 cup ketchup 2 tablespoons steak sauce Preheat oven to 350 degrees F.

Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water.

Press into a 9x5 inch loaf pan. Bake in preheated oven 50 to 60 minutes.

1 Tons! Sausage is easy. Pop a couple of those suckers in the oven to heat up and open up a jar of sauerkraut.

When the sausage is done serve it on a nice appropriate roll (bun) with some brown mustard and topped off with the kraut. Ground beef - Try tacos. Brown and drain the meat and add a packet of Taco seasoning mix (follow the package directions).

Heat your taco shells in the oven for a couple of minutes to crisp them up. Serve with shredded lettuce, diced tomato, and cheese. Homemade guacamole is a good side and is also very easy.

Peel and pit an avocado, stick it in a bowl with some salsa, and smash it up into a paste. Meatloaf is another easy one - Use your favorite search engine for a good recipe. There are almost as many meatloaf recopies out there as there are moms in America.Steaks - Once again their are many options. It depends on the type of steak, but choices range from fajitas (cheap skirt steak and a good maranade) to beef stroganoff (needs a higher end cut of meat and a nice sour cream sauce, but still not hard to make).

Good Luck, and most of all, take joy in cooking. View it as an art form rather than a household chore!
