I'm assuming you are a guy, so at fancier restaurants just enjoy yourself and the staff won't harass you too much. They should know when you are wrapping up and bring you your check. If they don't, just catch their eye nonchalantly.
Have your finger pointed in the air as if you are getting their attention. Just kind of nod towards the table once you gain their attention and they should understand. Now for coolness points don't let your date see how much it was.
Look at the check, it should come in some sort of leather booklet. Place your cash or card inside of it and lay it facedown on the table. They'll come back in about a minute and collect it and bring you back your card and receipt.
If she asks, just deflect the question and act as if you done it a million times before. Tip well with some cash on the table and give a nod to the waiter as you exit. If you act smooth the staff will act smooth with you.
Let your server know when you're ready for the check. Depending on the restaurant you go to, you might have a waitress OR a waiter! They'll usually bring your bill in a small folder and you can pay either with cash or a credit card.
Don't forget to tip at least fifteen percent! Even if you do pay with a credit card, leave cash for the tip; some bosses "forget" to give the wait staff their share of tips that are added to the bill when the customer pays with a credit card.
