If you are using conventional tanks, you could probably get by with 2 50 gallon (standard size) tanks; this assumes that you don't try to take all 8 showers in a row. If you use a tempering valve system, you could also run the tanks hotter, and give you more shower time from the same tanks. I see in your other question that you are also considering tankless; which might be cost effective in your situation.
One reason for going with 50 gallon tanks is that they are more common, and if you do draw them down significantly, you get two burners working on the recovery. However, depending on how you schedule things you could probably still keep things going. Gas water heaters do recover faster than propane or electric.

Typically, the gas line would split to serve both, ans they might have separate flues or a common flue. The water typically goes from one to the other in series. This way, if you use less than 50 gallons, only the first one runs, but if you use more than 50, they both run.
I didn't see this question before I answered the second. The two tanks in series works.
