I have a very nice recipe book at home that has some great, easy recipes for scallops. This is my favorite though: Scallops Provencal This is a scallop dish that has a orange zest with tomato sauce. You can use either bay or sea scallops in this recipe.1 large leek 2 Tbsp.
Of olive oil 2 finely chopped garlic cloves 14 ounces of diced tomatoes, canned or fresh 1 tsp of salt 1/2 tsp of grated orange peeling A pinch of cayenne pepper 1 lb of scallops 1/4 cup of all purpose flour 1. Prepare the leek by cutting off the roots and trimming the dark green tops off. Now cut the leek in half, lengthwise.
Now cut crosswise making thin slices. Place the slices into a big bowl of cool water to rinse. Swish it around in the bowl to remove the sand.
Then transfer it into a colander, drain. 2. Put 1/2 of the olive oil in a medium size, non stick skillet and heat on medium.
Place the leek and garlic in the skillet and cook, stirring for about 7 to 8 minutes... until the leek is tender. 3. Once the leek is tender, add in the tomatoes, along with the juice.1/2 of the salt, the orange peel and the red pepper.
Heat to a boiling point, then reduce the heat to a simmer for about 5 minutes.4. Meantime, pull off the tough muscle from the scallops. Dry them off by patting with a paper towel.
Now cut them in half throw the middle if they are large in size. 5. Put the rest of the olive oil into a 12 inch nonstick skillet.
Heat on medium to high. Coat the scallops with the flour. Sprinkle the tops of the scallops with the 1/2 teaspoon of remaining salt.6.
Place the scallops in the skillet and cook while stirring for about 4 minutes. They should be lightly golden.7. Put in the sauce and simmer until heated evenly.
This recipe makes about 4 servings. It is low in calories and fat but has quite a bit of sodium. Using the fresh tomatoes can reduce the sodium.
We like to serve them with rice.
Here is a very easy recipe which I learn t from "Allrecipes. Com" and have made a dozen times. Its delicious.

Turn broiler on. 2. Rinse scallop and place in a shallow baking pan.
Sprinkle with garlic salt, melted butter or margarine and lemon juice. 3. Broil 6 to 8 minutes or until scallops start to turn golden.
Remove from oven and serve with extra melted butter or margarine on the side for dipping. -------end quote---- Sometimes I mix all the wet ingredients together and then brush on the scallop. And sprinkle some crushed pepper and Parmesan cheese,as suggested by one of the reviewers .
Turns out to be the best. Its awesome.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
