I have never tried using burger meat when making a stir fry and although I suppose you could try it, I don't think it would work all that well, it's minced too fine. Burger meat works very well for dishes like chilli and bolognaise sauce, even the old English favorite cottage pie, or any dish where there is a sauce, really. Now you also mention chicken and this is one of the best of all meats for stir frying, especially chicken breast.It cooks quickly, it's tender and you can use it with a great variety of other ingredients.
You can also use almost any type of meat, but it needs to be a tender cut, which will remain that way with quick cooking, for instance beef is excellent, but not stewing beef, it would need to be at least frying steak. If you are buying meat to cook a stir fry and you are not sure which cut to buy, just ask the advice of the butcher at your local store.
.I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
