Like cucumbers and squash, honeydew (Curcubia melo) and other melons belong to the Cucurbitaceae family, whose members grow on climbing or trailing vines with round, pointed, or folded leaves and small yellow flowers. Honeydew is a slightly oval melon distinguished by a smooth, creamy white or pale yellow-green rind that ripens to creamy yellow and its extraordinarily sweet and juicy pastel green flesh -- although one variety of honeydew has orange flesh and a salmon-colored rind. Ripe honeydews are about 7 inches in diameter and 8 inches long, and range in weight from 4 to 8 pounds.
