They're made differently Rice vinegars are made directly from fermented rice. Rice wine vinegars are made out of rice wine (actually, the leftovers of making rice wine). So they have different flavors, but there are so many different ways of making each that a recipe calling for one had better expect a pretty wide range of vinegars.
