If you use it as a marinade and also in cooking tougher cuts of meat it will also serve to tenderise the meat. If you are cooking fish in a white sauce, the addition of white wine will improve the flavor, which can sometimes be a little bland.
Wine can be used to enhance many dishes, beef casserole cooked with red wine is a very tasty meal as is chicken with red or white wine. I make a very enjoyable leek and potato soup, to which I always add some white wine, it just makes it taste that much better.
