I would prefer something that you could place in water to soak the cookware and something that is kind to the environment. I have tried several but nothing works including the highly advertised products most of them are a scam. It comes in a dark blue trigger spray bottle. You don't soak the pot. Just put it on and let it sit for about 20 minutes, I think.
I was amazed at how well it worked on burnt on gunk on my enamel cookware. Misspinkpiggy's Recommendations Power Dissolver This is the stuff..
Bar Keeper's Friend This product was recommended to me by the sales clerk in Williams~Sonoma, and I use it for both my Calphalon and my stainless steel! :) You can find it in your grocery store for under $2, and it works like a gem! .
Soak the pots and pans in ammonia, with hot or warm soapy water. Leave for at least 20 minutes. How much ammonia?
Not that much, a quick pour. You may still have to scrub, and if the cookware can take a steel pad without marring the surface, then use a steel pad (Brillo or something) to scrub. The ammonia does loosen the oil and food; I use it on my broiler pan.It is best if you can soak the cookware relatively soon after usage, but you can soak very old stuff as well and you can leave it overnight.
I'm assuming you are not using cast iron.

Basic techniques for cleaning pots Before trying with commercial chemical products I suggest to give a chance to this: If you can, put your pots into boiling water with sliced lemon (green, acid lemon; not the sweet yellow one); let it boil for 10 minutes. Then rinse and wash with your prefered dish soap. Another option is 1/2 cup of Vinegar with 4 cups of water.
You will always have to to scrub your pots a lot to remove solid stains. I've found that non-abrasive materials are better than metallic fibers because the second ones will always damage your cookware, reducing its lifetime and sometimes releases or produce undesired chemical reaction during cooking. Plastic fibers are better because they will scrub stain without scratching the surface of your pots.
The last option is to try with abrasive chemical products, the better choice depends on the material of your cookware: steel, copper, aluminium, etc. Sources: Own .
To remove cooked on grease from pans I spray it with oven cleaner, put it in a garbage bag, close it up, put it outside overnight and the next morning the grease washes right off. I had heard about this for oven racks and the pans(from a garage sale) I tried it with had years of cooked on grease. I was amazed.
Hope this helps! .
