My very best and favorite casserole recipe is Broccoli Casserole. This can be made with just broccoli as a side dish or you can add chicken to make it a complete meal. Ingredients: 1 large head of broccoli 1 can of Cream of Mushroom soup ½ cup Mayonnaise 1 egg ¾ cup shredded cheddar cheese ¾ cup shredded or cubed Velveeta cheese 1 medium sized onion 1 tsp.

Salt ½ tsp. Black pepper 1-2 cups Bread crumbs, crushed crackers or crushed pita chips 1-2 Tbls. Butter Cut broccoli into medium sized pieces and cook on stove-top until just barely soft.

While broccoli is cooking, whisk egg, soup, mayo and salt and pepper together. Chop onion and add to mixture. Add cheese and then drained and cooked broccoli.

Top with bread, or crackers and dot with butter. Bake at 350 degrees about 1 hour, until casserole is bubbly. Option: Add cut up, cooked chicken.

Chicken and Dumplings is one of my favorites. You can prepare it on the stove top or you can make a casserole. The basic concept is to boil the whole chicken and remove the bones and skin.

The rich broth from the cooked chicken is a how to make broth|great broth for cooking your dish. Once your meat is back in the broth, you bring it to a boil before adding dumplings. If you how to make biscuits|make biscuits you can just drop spoonfuls of that dough into the boiling broth and cook until they are done.

If you are not a biscuit cook, you can use cut up canned biscuits or you can prepare biscuit dough from a baking mix like Bisquik. If you want to do it as a casserole, you can use this recipe. It is one I have adapted over the years from a variety of sources so I can't really cite a source on it.

Chicken and Dumpling Casserole 1/2 cup chopped onion 1/4 cup butter 1/2 cup flour 1 tsp salt 1/4 tsp white pepper 4 cups chicken broth 4 to 6 cups shredded cooked chicken Using a sauce pan large enough to hold the broth, saute onion in butter until tender. Add flour, salt, pepper and broth and bring to a boil. Cook for an additional 1 to 2 minutes after it begins to boil, stirring constantly.

Remove from heat, stir in chicken and thoroughly mix. Pour into a greased 13x9 inch baking dish. DUMPLINGS Use 2 cups of baking mix with 2/3 cup of milk.

Mix just until the dry ingredients are incorporated with the wet. Drop by tablespoonfuls of the biscuit dough onto the casserole until the top is covered. Bake, uncovered, at 350 degrees for 30 minutes.

If the dumplings do not appear to be done at this point, cover and return to the oven for another 10 minutes. The casserole is best if the dumplings cook fully without browning excessively. The original recipe said it served 6 to 8 people but when we eat this, it doesn't yield many leftovers from the four of us.

Although you could probably count the teen boy as two! You will notice peas in the picture. We don't care for peas in ours but you can add peas or carrots either one.

My college roommate gave me this recipe and it's still one of my all-time favorites. It's made in the crockpot and is incredibly easy. Crockpot Chicken a L'orange Ingredients: 4 boneless/skinless chicken breasts, fat trimmed 2/3 c.

Flour 1 tsp. Salt 1/2 tsp. Nutmeg 1 tsp.

Cinnamon 1/2 tsp. Pepper 1/4 tsp. Garlic powder 3 sweet potatoes, peeled and sliced in 1/4" thick slices 1 can condensed cream of celery soup 1/2 c.

Orange juice 1 tsp. Orange peel 1 Tbsp. Brown sugar 3 Tbsp.

Flour Directions: 1. Place the sweet potatoes in the bottom of your crockpot. 2.

Combine the flour and spices in a ziplock bag. Throw the chicken in the bag and shake to coat. Shake off the excess flour and put the chicken on top of the potatoes.3.

Mix the rest of the ingredients together and pour over everything. 4. Cook on low for 6-8 hours, or high for 2-1/2 to 4.

The potatoes should be tender and the chicken should be cooked through and should just fall apart when you cut into it. Serves about 4. I know, the ingredients sound like a strange mixture, but this really is fantastic.

Enjoy!
