In Filipino Adobo, the chicken is marinated in garlic and vinegar which is the main ingredients of the dish. So, Adobo has a lot of versions in different spanish countries. Ingredients: 2 lbs chicken (cut in medium pieces) 1 head garlic, chopped 1/2 onion, chopped 1/4 cup soy sauce 1/2 tsp.

Salt ( if cutting down in sodium, put the salt at end of cooking) 1 tbsp. Sugar 1 tablespoon ground black pepper (or black peppercorns) 2 cups water 1/2 cup vinegar (rice vinegar or white wine vinegar work best) 2 bay leaves 2 tablespoons cooking oil Directions: In a deep casserole, put chicken pieces, vinegar, bay leaves, pepper, soy sauce, onion ,garlic and water. Take out chicken pieces and fry it in cooking oil (vegetable oil or any oil you prefer) in a non-stick frying pan, in medium heat just about brown in color. Be careful, it might splatter. Frying gives a delicious flavor to the chicken.

Adjust salt and pepper as desired at end of cooking. It is usually serve over plain rice. Hope you'll like it.
