I'm mostly a "as seen in Julia's kitchen" type of person. I don't want 10 dozen gadgets of limited use that I have nowhere to keep. I tend to go for the classics.
Currently, my favorite is the immersion blender ("stick blender") I got for my birthday. I can stick it right down inside a pot of vegetables and turn them into a thick, creamy soup. Or I can fill up a glass with yogurt, berries, and eggs, and make a smoothie.
I have even used it to make cheesecake when one of the beaters to my mixer went missing! The resulting cheesecake mix was so fluffy when baked it was almost like a popover. Overall, it's great when I don't want to dirty either my blender or my food processor. My next favorite is my mandoline.
Again, doesn't require assembling/disassembling and cleaning my food processor, and makes it so easy to get paper-thin slices of things. I can cut things that thin, almost, but with a great deal of intense, slow effort; whereas on the mandoline it's a quick swipe. And it makes grating or shredding things swift and simple.
There's a big reason that every decent restaurant owns at least one professional-grade mandoline--particularly French restaurants.
