I can completely relate to your problem of greying hair in your thirties, mine stated going grey when I was still in my twenties! So this is the situation, first the bad news, there is no way you can stop this happening. It is probable that one of your parents or grandparents also had prematurely grey hair and unfortunately for you, you have inherited the gene.
Now for some ways to deal with it. Firstly, if it makes you feel a bit better, grey hair is usually a little thicker in texture, so you may find you have a fuller head of hair as it progresses.
