I think the best video screen capture software for the Mac is Screenflow from Telestream, Inc. They have a trial so you can see what you get before you buy, and an iPhone app as well. I used the software a while back, but remember I was impressed with the features.

I will put a link in the resources below. On the PC, I've used Camtasia for years, and I like that a lot. They make it very easy to use as well.
