Rub your leg of lamb with salt and sprinkle with pepper, stab holes in it with small very sharp knife and put slices of garlic and sprigs of rosemary in if you have. Start Lamb in hot oven, say 220 Celsius, for about 20 mins, bag or no bag, then drop to 180 and cook for about an hour and a half. Poke to see what colour juices are, pale pink is perfect.
