Lemon balm, water, sugar Lemon balm is great for making sauces, teas, and other things where you'd like a lemony, herby tang. The most basic: mix 1 cup water and 1 cup sugar. Bring to a boil.

Add 1/4 cup bruised lemon balm leaves. Allow to sit for 20 minutes. Strain.

That makes a lemon balm syrup which goes brilliantly on pound cake, strawberries, or mixed into tea. Speaking of tea, the leaves make great tea. Bruise a few leaves (4-6), put them in a cup, add boiling water, and steep for 5 minutes. It also goes great with a few leaves of spearmint added (as does the lemon balm syrup).

You can make a fantastic lemon candy by taking the lemon balm syrup and boiling it until it reaches the firm ball stage (244 degrees) and pour it into a mold or just onto parchment paper. Cool and eat..

Use it as you would mint or lemon Lemon balm can be added to a lot of sauces to give them a little "kick". I use it mostly for chicken or fish recipes, by just cutting it and adding it to the sauce at the end. Add it to your salad dressing.

Use it in tea or cold drinks such as lemonade or juice. Make a refreshing drink by gently bruising some leaves and adding some hot water. Filter and add to your lemonade.

Tea & potpourri's Lemon balm (melissa officionalis) is a wonderful herb! I use it mainly for tea, because it has that wonderful lemon flavor. You can also use lemon balm as a garnish, or put it into dishes when you want some "zip".

In addition, lemon balm has soothing qualities, and works well with lavender for either a tea or "dream pillow". In teas, you can use the leaves fresh or dried. For the pillow, you obviousely use the dried leaves!

I have a friend who just tosses a handful of leaves in a jar with water & puts it in the sun for "sun tea". Did you know that the Arabs introduced this herb to Europe? In those times, as now, it was used to treat anxiety & depression. It is also thought to be good for lowering blood pressure, and treating colds & flu.

Apparently it is also used for fevers & gas. Just be careful if using it in quantity for medicinal purposes - you may want to check with your doctor first! Check out this website - has some neat recipes using lemon balm!

1 PamPerdue, regarding your answer "Lemon balm, water, sugar": Lovely idea to make candy. My lemon balm is ground cover, smothering weeds all over my small, shady back yard. I use it for tea and dream pillows.

Have always thought it has an earthiness that compliments bean soups, meats, and potatoes. I just love the plant for being such a good grower, and useful too.

I cant really gove you an answer, but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
